Why We Bake: The Oh Happy Bake Story

Every bakery has a reason it exists. Some start as a hobby. Some as a business idea. Ours started because home was a long way away.

When Brigitte moved to Canada from Germany, she brought very little with her in the way of things. But she brought something worth more — generations of family recipes, and the knowledge of how to make them properly. The kind of baking that doesn't come from a cookbook, but from standing next to someone in a kitchen watching how it's done, and then doing it yourself until it's right.

Why baking? Why these recipes?

In Germany, baking isn't a hobby — it's just what you do. Birthdays have specific cakes. Christmas has specific cookies. There are recipes that belong to certain weeks of the year, certain occasions, certain people. When Brigitte arrived in Nanaimo, she found herself surrounded by people who'd never tasted a proper Elisenlebkuchen, or a real Black Forest cake made from scratch, or shortbread that actually crumbles the way it should.

That gap between what she knew and what was available here is why Oh Happy Bake exists. It started in 2013 — not as a grand plan, but as an honest answer to a simple question: what if we just shared what we know?

Baking with Helga

Today, Brigitte and her daughter Helga bake every order fresh from our commercial kitchen in Nanaimo. Brigitte develops and tests every recipe — refining, adjusting, making sure each one is exactly right before it goes on the menu. Helga brings those recipes to life for every single order. Nothing is made in advance, nothing sits on a shelf. Every cake, every cookie, every treat is made for the person who ordered it.

What we're baking this spring

Right now, our kitchen smells like pistachio, raspberry, vanilla, and almond. Our Pistachio Raspberry Cake is one of the most beautiful things we've ever put on the menu — earthy, nutty, and bright all at once. The Cloud Nine Vanilla is as close to perfect as a vanilla cake can get. And the Raspberry Vanilla Dream is exactly what May should taste like.
